We found Solveig Tofte, and to no one’s surprise, she was baking.

Solveig Tofte is baking for a new crowd, as much as that pains bread lovers in Minneapolis.
Tofte, the force behind now-closed Sun Street Breads Nicollet Avenue location, has been running the business out of a trailer with her husband and co-owner Martin Ouimet in Grand Marais, Minn. The couple made the move north in August after closing the Minneapolis store in Marchof 2026.
Since its opening in 2011, Mpls StPaul magazine selected Sun Street Breads as a best new restaurant and was named by Food Network in 2020 as one of the best bread bakeries in the country.
So why the move?
Tofte told Mpls StPaul magazine in July, 2025, that rising costs of utilities and ingredients played a large role.
More recently, Tofte said Grand Marais has welcomed Sun Street Breads with a mix of familiar and new customers.
“[There are] some new people that we’ve never met before, and some people that we’ve met on you know days one and two, and people that we’ve known for years,” Tofte said.
Sun Street Breads’ small menu changes from week to week. Tofte said running the operation without a large staff has given her freedom to change the menu as she pleases.
Having participated in national baking competitions and acted as a member of the Bread Bakers Guild of America, the move to Grand Marais presents Tofte new challenges: she is baking in what she described as a “very small kitchen,” in a building that used to be a church.
Tofte said she’s made mistakes while getting used to her new arrangement.
“I love having these experiences because when I go to judge or teach, I am fully right there with that person,” Tofte said. “If you’re super comfortable and super successful in your space every day, it’s kind of hard to remember what it’s like to be kind of wobbly.”
Sun Street Breads closes for the season Oct. 17, but Tofte said she hopes to open for a holiday bake sale in December.
